Best Summer Guacamole

Best Summer Guacamole

Guacamole is a bright fresh condiment built from a few core ingredients. It really adds a Mexican feel to soft tacos or corn chips, is easy to make, and much nicer than jar.

Start with ripe avocados; they should yield slightly to gentle pressure and have a uniform green flesh. Scoop the flesh into a bowl and mash it lightly with a fork, keeping some texture rather than creating a smooth paste. Add finely diced onion, chopped coriander, salt and pepper to season. Lime juice provides acidity and helps slow oxidation, so include enough to balance the richness of the avocado.

Many home cooks add extras such fresh jalapeƱo, ground chili, chipotle salt, these are optional and depend on how the guacamole will be used and whose eating it!

The mixture should be prepared close to serving time, as even with the citrus it will darken if left too long. Refrigerate and only store briefly with a piece of baking or cling film paper pressed directly onto the surface to limit air exposure.

This short YouTube clip shows how finely I dice the red onion and tomato:

Ingredients

  • 2 soft avocados
  • 1/2 red onion, finely chopped
  • juice 1 lemon or lime
  • 1 ripe tomato, cubed into small pieces
  • Ground sea salt and black pepper
  • Chopped cilantro (coriander) to taste
  • pinch chili powder or red chipotle salt

Method

  1. Mash the avocado
  2. Add the citrus juice, sale and pepper, red onion, cilantro, pinch of chili (if using), and mix.
  3. Add the tomato and mix gently
  4. Season with a little cilantro on top, more ground black pepper and a sprinkle of chili powder or chipotle salt
  5. Serve with soft tacos or corn chips.
