How to make Lasagna Dough at home (no special equipment required)

Making pasta at home sounds like a project reserved for specialised chefs and those with specialist equipment, but lasagne sheets are one of the simplest ways to make pasta, particularly for beginners. The dough is basic, the method is no-fuss, and the results are super satisfying. Adding spinach or Asian greens gives the sheets the green colour without changing the flavor of the dough significantly yet still works well with both meat and vegetable fillings.

The greens are wilted, drained, and blended with eggs and olive oil until smooth. This mixture forms the liquid base of the dough. Once combined with flour, the dough comes together quickly and becomes easy to handle after a short rest. It feels softer than a standard egg pasta dough, but rolls out without fuss.

One of the advantages of lasagne sheets is that they don’t require a pasta machine. There’s no need to chase perfect ribbons or uniform thickness. The key is simply to divide the dough and roll each portion to match the size of your baking dish. This makes the process accessible, even for cooks who prefer to keep equipment to a minimum. A rolling pin and a clear bench are all that’s needed.

The sheets are briefly pre‑cooked in salted water then layered straight into the dish. They still absorb sauce well and soften evenly in the oven. The finished lasagne has the familiar comfort of the classic version, with the added appeal of fresh pasta made by hand.

Green lasagne sheets are a practical entry point into homemade pasta. They show how achievable the process is, how little equipment is required, and how a simple dough can elevate a familiar dish with colour and quiet satisfaction.

Note that if you want plain coloured pasta sheets, simply omit the greens and just put the egg straight into the dough instead

Method

Wash and dry the greens, then wilt them completely in a pan. Tip them into a colander to drain well, then gather them in one hand, and squeeze out as much moisture as possible - they should feel almost dry.

Blitz the eggs, greens, and olive oil in a food processor or blender until the greens are fully broken down and the mixture is smooth.

Place the flour in a mound on a flat surface and make a well in the centre. Pour the green egg mixture into the well and, using your fingers, start drawing in the flour until a stiff dough forms. Push any remaining loose flour to one side and knead the dough for several minutes, until it becomes bright green, smooth, and no longer sticky.

Cover the dough with a warmed bowl and let it rest for 20–30 minutes.

Cut the dough into four pieces. On a lightly floured bench, roll each piece thinly to fit the size of your lasagne dish.

Bring a large pot of salted water to the boil and briefly pre‑cook each sheet for about 2 minutes. Lift out carefully and begin assembling your lasagne, layering the green pasta with meat ragĂș and cheese sauce as each sheet comes out of the pot.
