This recipe is my version of the famous British Sticky Toffee Pudding with a twist. It offers a straightforward, reliable dessert that uses everyday pantry ingredients and less-than-best or spare apples. It produces a soft, cake‑like pudding with a built‑in sauce created during baking. The method is simple, and the dish suits weeknight cooking as well as larger family meals, as it can be prepared quickly and baked without further attention. Is easy to double for a large gathering.

The base of the pudding is made by combining brown sugar, butter, an egg, chopped dates, and apple. These ingredients create a dense batter that holds its shape while still absorbing the sauce poured over the top. Dates provide natural sweetness and texture, while apple adds moisture and helps balance the richness of the finished dish. Standard flour and baking powder give the pudding lift without making it too light.

The sauce is prepared separately by mixing brown sugar, boiling water, and butter. When poured over the batter, the liquid settles beneath the surface and forms a thick, caramel‑style sauce during baking. Pouring the liquid in one spot, ideally in the centre, helps achieve an even result and prevents the batter from breaking apart.

The pudding is baked covered at 150°C for one hour. This slow, gentle heat allows the sauce to develop while the top sets into a soft crust. Once baked, the dish can be served immediately. It pairs well with softly whipped cream or ice cream, both of which complement the warm pudding and help balance its sweetness.

Batter

50gm butter, melted

1/4 c brown sugar

1 egg

3/4 cup chopped dates

2 apples, cored and grated (can leave skin on(

1 1/4 c flour

2 tsp baking powder

Lemon zest 

Sauce:

1 3/4 c boiling water

3/4 c brown sugar

2 tsp butter

Method

Preheat the oven to 150°C fan.

In a mixing bowl, combine the brown sugar and softened butter, stirring until creamy. Add the egg and beat until well blended. Fold in the chopped dates and apple. Add the flour and baking powder, mixing to form a thick batter.

In a separate jug, whisk together the brown sugar, boiling water, and butter until the sugar dissolves.

Pour the sauce gently over the batter, aiming for one spot in the centre if you can.

Cover the dish and bake for 1 hour, until the top is set and the sauce is bubbling from the sides.

Serve warm with softly whipped cream or a scoop of ice cream.
