| Braised Sausages with White Beans and Wilted Asian Greens |

The almost medieval-style flavours settle into each other in a way that feels slow‑cooked, as though it has been simmering gently for days, even though it comes together in a straightforward, weeknight‑friendly way. There’s also a distinct French‑bistro quality to the final result. In this case I simply had pak choy in my kitchen garden and decided to put it to good use with great results. Greens like choy sum, gai lan, bok or pak choy behave much like silver beet or spinach when braised, adding gentle structure, and colour without dominating the flavour. They soften into the sauce and balance the richness of the sausages and beans, making the dish feel lighter and more rounded.

Ingredients
6 fresh sausages
olive oil
1/2 onion, peeled and thinly sliced
2 bunches roughly sliced asian greens (eg: pak or bok choy), silver beet or spinach
1/2 cup homemade vegetable stock
1/4 - 1/2 cup dry white wine (Sauvignon Blanc or Pinot Grigio)
1 beef oxo instant stock cube
1 tbsp flour
1 can cannellini beans, drained (1/4 cup brine reserved)
Ground sea salt and black pepper
1/2 cup pouring cream
Method
Pre-heat the oven to 180 degrees c fan.
Braise the sausages over medium-high heat until browned, transfer to a baking dish
In the same pan add olive oil and sauté the onion until light brown, add the crumbled beef oxo cube and flour and stir to absorb the sausage and onion cooking juices.
Turn the heat to low and add the greens and wilt for a few minutes. Add the beans, reserved brine, vegetable stock and wine. Simmer on low for a minute or two. Transfer to the baking dish and cover the sausages. Season with ground sea salt and black pepper. Add t

Pour the cream over the sausages and mix gently.
Serve on warm plates with crusty bread.
