Achieving that deep, glossy, fudgy centre is part science, part technique — and the secret is simpler than you might think. It starts with how you melt your butter and cocoa and then the sugar. Enter the double‑boiler method.

A double boiler is just a heatproof bowl set over gently simmering water. It’s an old‑school technique, but it gives you the kind of control that brownie batter loves. Direct heat can scorch cocoa, split butter, or cook the eggs too early, all of which lead to dry or crumbly brownies. Using a double boiler keeps everything warm, slow, and even — exactly what you need for a silky, molten base.

As the butter softens over steam, the cocoa blooms, releasing its deeper chocolate notes. The sugar dissolves more evenly, which is key to that shiny batter brownie lovers everyone chases. Ingredients

  • 125 g butter

  • ¼ cup dark cocoa (not drinking chocolate or dutch)

  • ½ tsp vanilla essence

  • 1 cup sugar

  • 2 eggs, lightly beaten

  • ¾ cup flour

  • ¼ cup cornflour

  • ¼ tsp salt

  • Optional: chocolate buttons or drops (milk or dark, choose what you prefer)

Method

Preheat the oven to 150°C fan.

Half‑fill a saucepan with water and bring it to a gentle simmer. Place a metal bowl into the water and add the butter to soften and melt. Stir in the sifted cocoa, then the vanilla, followed by the sugar. Using a tea towel or oven mitt to hold the bowl is helpful here as it can heat up quickly.

Remove from heat, add the beaten eggs, then sift in the flour and cornflour. Mix until the batter is glossy and fudgy. Fold through chocolate drops or buttons if using.

Line a swiss roll tin with crumpled baking paper and spread the mixture out. Sprinkle a few more chocolate buttons or drops over the top.

Bake for 15-20 minutes. Note the goal is to undercook to help keep the brownie moist.

Turn upside down onto a cooling rack and peel the paper off. Slice when cold and sprinkle with icing/powdered sugar.

Freezes well for instant lunch box fillers.
