Pumpkin & Butterbean Curry

The smell of an aromatic pot of vegetarian curry simmering away on a winter's evening is to die for and a great change from meat-based meals. This sweet roasted pumpkin with the creamy heartiness of butter or cannellini beans comes about as many of my recipes do, an idea about a dish, using seasonal produce or what's to hand, and that familiar urge to make something different, nourishing and super tasty.

The base starts with slow‑softened vegetables and plenty of aromatics, giving the curry a depth that tastes like it took far longer than it actually did. Roasting definitely improves the flavor of the pumpkin in this dish. Once the spices bloom, everything relaxes into a silky coconut cream sauce absorbed by the beans and pumpkin. The butter beans bring a lovely creaminess without needing much else, and the pumpkin breaks down just enough to thicken the sauce while still leaving soft, golden pieces throughout. The streaky bacon option adds further depth and flavour but is not necessary if wanting a vegetarian dish. This recipe is a gentle curry - warming rather than fiery - but you can always add a pinch more heat if chili heat is your style.

What I love most is how adaptable it is. Serve it with rice, spoon it over baked potatoes, add some grilled sausages, or ladle it into bowls with warm flatbreads for scooping. It reheats beautifully, making it a great option for lunches or busy weeknights when you want something wholesome ready to go. And like many curries, the flavors deepen overnight, so tomorrow’s bowl is often even better.

Ingredients

Serves 4

  • 2 cups peeled pumpkin, chopped into chunks

  • 1 large onion, diced

  • 2 garlic cloves, crushed

  • 2 slices good streaky bacon (optional, omit for a vegetarian curry)

  • 2 carrots, grated

  • 1 tbsp ginger purée (or freshly grated ginger)

  • 1 tbsp ground cumin

  • 1 tbsp garam masala

  • 1 tsp ground turmeric

  • Dash of chili flakes (to taste, but optional)

  • Ground sea salt and black pepper

  • 1 can butter or cannellini beans, drained

  • 1 tin coconut milk (cheapest)

  • 1 tin plain chopped tomatoes (cheapest)

  • 2 large handfuls spinach or equivalent frozen

  • Squeeze of lime juice if you have it fresh

  • Cooked white rice to serve


Method

  1. Roast the chopped pumpkin in olive oil in the oven until cooked but completely mushy - about 1/2 - 3/4 of an hour. The pumpkin can be cooked ahead ready to use in this dish.

  2. Heat the oil to medium high and fry the garlic and onion 5–10 minutes until softened and lightly caramelized, then add the chopped streaky bacon if using.

  3. Add the dry spices and mix through allowing them to 'toast' for a couple of minutes to release their fragrance and flavors, then add the grated carrot and ginger.

  4. Add half the roasted pumpkin chunks, drained butter beans, coconut milk, and chopped tomatoes. Stir well and bring to a gentle simmer. Add salt and pepper.

  5. Simmer for 10–15 minutes until the sauce thickens and the flavors come together.

  6. Just before serving, add the spinach and remaining roasted pumpkin chunks and mix through, allow to cook for a few minutes.

  7. Taste and adjust seasoning if needed.

Serve with rice or naan.
