Cilantro (or coriander as it's known in some parts of the world) lime rice is one of those surprise kitchen pleasures that feels fresh every time you make it. The combination of warm rice, bright lime, with the cilantro has a way of lifting a meal without demanding any fuss - even for those people who seemingly hate cilantro! It’s simple, but the flavour is surprisingly layered: citrusy, fragrant, and full of bright weather vibes.

Ingredients:

White basmati rice

Handful cilantri (coriander)

Lime juice and zest

Olive oil

Ground sea salt & black pepper


Method:

Cook the rice in accordance with the packet instructions.  Cool then add the chopped cilantro, lime juice and zest, oilive oil, salt and pepper.

Serve with a few chili flakes on top or chopped fresh chili if you have it.
